Tacos. I am pretty sure I could eat tacos at least once a week. The greatest components of MY favorite tacos are the perfect tortilla, protein, and taco sauce/salsa!
I would honestly be happy if those were the only parts of my taco, as long as each of those components were perfect! Although, it is fun to have lots of toppings too! These west coast tacos are delicious and have the perfect components AND some amazing extras!
I found out recently that The makers of LA VICTORIA® Brand are celebrating 100 years of flavors! The makers of LA VICTORIA® Brand have been creating their unique flavors since 1917 and they are having an event in Portland this month to celebrate! If you are in the Portland area, check out their event at Pioneer Square on July 13th! This duck taco recipe is from their site and it was so fun to make!
I have had duck a few times before and it’s a great alternative protein every now and then! Although, we don’t raise our ducks and chickens for meat, it was the perfect piece for these west coast tacos! AND THERE’S AVOCADOS!
- 12 oz Duck Confit
- 3 oz LA VICTORIA® Cilantro Salsa Mild
- 6 oz Orange-Cherry Salsa
- 1½ oz Mexican Marinade
- 3 oz Avocado Mousse
- 3 oz Cilantro Leaves
- For Orange Cherry Salsa:
- 8 segments Orange, sliced.
- ½ Red Onion
- 4 oz LA VICTORIA® Fired Roasted Chiles
- 2 cup Pitted and Diced Fresh Cherries
- 1 tsp Salt
- ⅛ tsp Black Pepper
- 3 tbs Lime Juice
- For Mexican Marinade:
- ½ cup Orange Juice
- 2 oz Lemon Juice
- 2 oz Extra Virgin Olive Oil
- 4 oz Bran Oil
- 1 tsp Shallots
- 1 tsp Garlic
- 1 tbs Cilantro, chopped
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tbs Salt
- ⅛ tsp Black Pepper
- 1 pinch Cayenne
- 2 oz Red Wine Vinegar
- For Avocado Mousse:
- 1 Avocado, ripe
- 1 Garlic Clove, minced
- 1 tsp Lemon Juice
- ½ tsp Salt
- Putting it all Together: In a hot sauté pan with a little oil add duck confit and stir until hot, add Mexican marinade and set a side. With a small spatula, smear avocado mousse into tortillas. Place hot duck confit on top of avocado mousse. Add LA VICTORIA® Salsa cilantro, orange and cherry salsa. Finish with cilantro leaves.
I was surprised by the flavor of the orange-cherry salsa and it was delicious! When I combined the orange-cherry salsa with the LA VICTORIA® Brand Thick’N Chunky Salsa it made the already flavorful tacos even more flavorful! Mouthwatering, huh?!
My favorite part about these tacos were all the extras! I especially liked the idea of the avocado mousse! Anything with avocado is my jam and you KNOW you will never find me eating tacos without it.
