Ever since staring my vegan diet, I have a new appreciation for salads! They can get boring, so I have to find ways to make it fun and delicious! Even though this is not vegan, it’s too good to not share! This avocado cilantro lime dressing is so fresh and perfect for salads! It’s even better when you use the dressing as a marinade for chicken to put on TOP of the salad!
This is going to be the first on my list for one of my cheat days! But until then, I guess my family will have to enjoy it for me. 😉
Creamy Avocado Cilantro Lime Dressing
- 1 Avocado
- 1 cup Stonyfield Organic Whole-Milk (Or Greek) Yogurt - Plain
- 2 Tablespoons Lime Juice
- ½ Cup of Cilantro
- Combine all ingredients
- Blend
- Chill in the fridge for at least 2 hours
- Serve on Taylor Farm's Organic Arugula Salad Blend or use as a marinade for chicken, beef, or fish!
I love how easy this dressing is to make! I always have these ingredients in my kitchen which made it even easier! If you want a little kick to it, I suggest adding a little fresh jalapeno to the blend OR using crispy jalapenos to top the salad like croutons!
I chose to pair the dressing with Taylor Farms Arugula Salad blend because of the spiciness that the greens bring to it naturally. Obviously you can use any one of their amazing salad blends! Especially when you pair it with delicious Stonyfield yogurt dressings!
Another great way to use this, if you’re not much of a salad person, is to make tostadas! Crunchy tortilla on the bottom. Meat, arugula, dressing, tomatoes on top… and voila!
For this recipe, I marinated the chicken in the dressing for about 2 hours. After, I grilled the chicken on the stove and added more dressing as I needed. After, I put the salad together and topped it with the chicken and more dressing. Lastly, I added crunchy jalapenos for texture and spice! YUM!
