Since moving to the Pacific Northwest, one of my favorite things to do is have a family meal with fresh, local ingredients! That’s what real comfort food is all about. It’s about going out with your boys to pick blackberries to have on your waffles the next morning. It’s about walking through the local farmers market buying fresh vegetables and the grocery store for locally raised Foster Farms Simply Raised fresh chicken. The new comfort food is about healthy, fresh ingredients that can be found locally. I mean, come on, who actually feels good and comforted by indulgent food? It might taste good but doesn’t it taste better when it’s fresh and you feel good about what you are putting in your body? The new comfort food is about food that tastes good AND makes you feel good.
There is something about Foster Farms Simply Raised Fresh Chicken that defines #thenewcomfortfood. It is locally grown in the Pacific Northwest (AND California) – with NO. ANTIBIOTICS. EVER. I know I feel comforted knowing the chicken I am buying is delivered fresh from local family farms!
I love cooking for my family but there are three things that are important to me:
- Finding fast and easy meals
- Using fresh ingredients
- Making it yummy enough that my little ones will want to eat it
Using Foster Farms Simply Raised Fresh Chicken to create this delicious Chili Lime Chicken dish allowed me to accomplish those three things. Check out how I made this amazing dish below!
- 2 pounds Foster Farms Simply Raised Fresh Chicken breast tenders
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 tablespoon chili pepper flakes
- ½ tablespoon of paprika
- ½ tablespoon garlic powder
- ½ tablspoon onion powder
- 2 limes - juiced
- Salsa:
- 1 avocado diced
- 1 cucumber, peeled and diced
- 1 tablespoon lime juice
- 1 clove garlic
- 1 tablespoon of chopped cilantro
- Put all chicken ingredients in a bag and marinate as long as possible (preferably overnight)
- Heat skillet on medium and add chicken to the pan
- Cook on both sides 7-8 minutes each
- Make salsa and add to finished chicken
I loved that this recipe could be finished and prepped easily AND only had a few ingredients!
That’s the whole definition of The New Comfort Food! It’s a modern interpretation of a classic comfort food dish, implying “comfort,” but with a modern, healthy twist. It’s about balance rather than indulgence. It’s about using few, mostly local, seasonal ingredients with easy steps and fast prep time.
Everything about this meal screamed new comfort food to me. The freshness of the salsa paired with the quality of the Foster Farms Simply Raised Fresh Chicken was the perfect combination! I just might have to put that salsa on everything!
