Banana Bread. Okay. SO if you know me or have been reading along, you know I love to bake! Seriously, I would do it all day long if I could!
Since Little OX #3 came, I haven’t had much time to do anything, but I am so thankful I have been able to get back into baking! Plus, a friend had too many bananas and gave some to me, so why not start my journey back into baking with banana bread! 🙂
The thing I love about banana bread is that there are so many different ways to cook it! And it even tastes great when you make healthy versions! YUM! HOWEVER, this is not one of those healthy ones. HAHA
Read along if you want to try out this crunchy, fluffy, banana deliciousness!
Is your mouth watering yet, because mine totally is? 😛
- Bread:
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 3-4 bananas (ripe and mashed)
- 3 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup walnuts (optional)'
- Topping:
- ½ cup coconut flakes
- ½ cup walnuts
- ¼ cup brown sugar
- ¼ cup butter
- Bread:
- Butter your bundt or loaf pan and set oven to 350
- Mix together butter, sugar, and eggs
- Beat in bananas
- Add dry ingredients and mix well
- Mix in Walnuts
- Pour in greased pan
- Topping:
- Add butter to a skillet on the stove
- Add coconut and walnuts to pan and cook for a minute or two
- Add brown sugar to the pan and cook until almost caramelized
- Add to TOP of banana mixture in pan
I only used a bundt pan because we don’t have any loaf pans right now, but I actually think I liked it better like that! 🙂 It was perfect and fluffy, with a sweet crunchy topping!
