This third trimester smoothie bowl that I whipped up in my kitchen was exactly what I needed. I am officially in the third trimester of my third pregnancy and my oh-so-energetic body is starting to slow down. Keeping up with two little ones is almost officially impossible! Isn’t pregnancy funny!? Every pregnancy for me has followed the normal phases almost to the day of each trimester transition. I remember with Little Ox #1 I woke up the morning of my second trimester and my horrible nausea was completely gone and I had a sudden burst of energy!!
Well, fast forward to now. I woke up to start my third trimester with an achy back and ready to go right back to sleep! However, I knew that if my children sat on the couch watching movies all day like I wanted to, EVERYONE would get cranky! So off to the museum we went! It was so much fun and it wore us ALL out! My children are in such better moods when all of us are unplugged and enjoying life and one another! I know that they both had a great time because they both went down for a nap at the same time with (almost) no fight! I call that a win especially because my three year old hardly takes naps anymore.
Enter the smoothie bowl…
Needing a snack and some A LOT of energy, I went the pantry and noticed my unopened bag of chia seeds from Costco. I might have scanned over that rather large bag, again, but the words “energy boost” on the back of the bag caught my eye. I quickly grabbed it and was set on making a smoothie bowl! So here is the long awaited recipe of my third trimester smoothie bowl!
- 2 cups of unsweetened coconut milk
- 1 cup of a baby kale/ baby spinach mix
- 1 cup of frozen mango (or other fruit)
- 2 tbsp of chia seeds
- toppings:
- frozen berries
- ½ tbsp of chia seeds
- ½ cup of granola or Raisin Bran Crunch!
- Combine all top ingredients in a blender and blend until you get your desired smoothie bowl consistency. Add to bowl and top with yummy toppings!
Chia seeds have SO many health benefits and there are a million different ways you can add them to recipes! Plus it is SO easy and doesn’t change the flavor of what you are eating! This third trimester smoothie bowl gave me a great boost of energy and great added health benefits for me and baby. Plus, when you don’t have granola you can add Raisin Bran Crunch because it made it amazing and it was the perfect crunch that I was looking for!
