We cooked burritos yesterday and had a bunch of leftover baked shredded chicken breast! So I figured I would use it today and show you an amazing + HEALTHY recipe today using my shredded chicken!
You all should know by now how much I love avocado! Well it’s my your lucky day, because I want to show your this delicious, simple recipe for my Cranberry-Almond Avocado Chicken Salad!
Cranberry-Almond Avocado Chicken Salad

Ingredients
- 1 Cup Shredded Chicken Breast
- 1 Small Avocado
- Lime Juice
- ⅛ cup of dried cranberries
- ⅛ cup of sliced or chopped almonds
Instructions
- Shred cooked chicken breast
- Put avocado and chicken together in a bowl
- Mash avocado with chicken and stir
- Add lime juice and mix
- Top with cranberry/almond mixture
- You can also top with tomatoes, cilantro, or garlic!
- Serve in a pita wrap, tortilla, whole wheat bun, in lettuce cups, or on top of salad greens!
Some of my favorite recipes are ones that you can mix up and change every time you make it! This recipe is topped with dried cranberries and chopped almonds, but next time I might top it with chopped tomatoes and fresh cilantro! Also – my favorite way to eat it is in lettuce wraps but it would also work perfectly on a whole wheat bun, tortilla, or stuffed into pita pockets!
This is a perfect summery recipe when you are trying to eat healthy, you have leftover shredded chicken, AND you love avocado! EXTRA Bonus: it is dairy free!
