Cookies are the best! I My toddler sure thinks so! 😉
I knew I wanted this cooking with toddlers segment to be about cookies, but I wasn’t sure what kind. I thought about doing my favorite snickerdoodle cookies, but I don’t know if I am ready to share that one with the world yet. (I will keep it to myself for now 😉
However, since things got busy, and since Easter was coming, I decided to do this segment later in the week – AND to bring you Easter sugar cookies.
Okay. So I have to tell you now. This recipe is the BEST sugar cookie recipe I have ever had. PLUS – it is also the best for rolling and decorating for every holiday! We use this recipe at Christmas time to decorate cookies with, too. So, I figured I would bring out the recipe for Easter (and for cooking with toddlers). Because you know what a toddler’s favorite thing to do with cookies is?? Other than eating them…
IT’S DECORATING them. It’s not easy to mess up at decorating cookies. Let your little go crazy! Put out different toppings, sprinkles, and frosting for them to use. Also, they love with the “cutting” too! If you have Easter cookie cutters, feel free to use those!
DISCLAIMER: these cookies are not healthy. Eat in moderation 😛
- 1 stick of Butter flavored shortening
- 1¼ cup of sugar
- ¼ cup of light corn syrup
- 1 tablespoon vanilla
- 2 eggs
- ¾ teaspoon of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 4 cups of flour (plus more if rolling)
- Mix together shortening and sugar in stand-mixer until well blended.
- Add in corn syrup, vanilla, and eggs and mix until light and fluffy.
- In a separate bowl, mix flour, baking powder and soda, and salt and add slowly to sugar mixture.
- Beat in until completely mixed and dough is formed.
- Cover and put in refrigerator (for 1 hr or overnight), if rolling and cutting.
- If you are not rolling it out, stuff in cookie press.
- After it has been refrigerated, roll out on flat surface with flour.
- Cut cookies or use cookie press and lay them out on ungreased baking sheet.
- Decorate cookies with sprinkles
- Place in oven at 375 degrees and cook for about 7-8 minutes.
- The thinner the cookies are, the less time they will take to cook
Pictures are always useful – so here is how we did things:
Here are the sprinkles we used! I wanted pastel colors to make them feel more like Easter!
Any pouring or mixing can be done by the toddler – they love those parts!
I always let my toddler crack the eggs. This time – one of the eggs missed the bowl! But who cares! 🙂 Easy clean up!
Instead of rolling and using cookie cutters – we tried out our new electric cookie press! All Little Ox #1 had to do was push a button! That part was fun!
SPRINKLES! Let them go crazy!
Mama did help though, to make sure some sprinkles made it on to the cookies…
I love how they turned out though!
YUM!
I hope you and your toddler have SO much fun with this one this weekend!
Have a Happy Easter and enjoy time with family and friends!
