Some of my favorite recipes are the ones that are “cleaned up” and healthy but they taste the same as their unhealthy counterparts!
One of the best examples of this is BANANA BREAD!
I love that there are so many different ways to do banana bread. Loafs, muffins, with chocolate chips, coconut shavings, nuts, and SO many others!
Banana bread is a favorite in my house and definitely toddler approved (which is what you always want anyway, right?)
I decided to do something a little different than what I usually do and I wanted to share with you my Clean Banana Bread Cupcake Recipe with Dairy Free Frosting!
- 4-5 Ripe Bananas
- ½ cup Applesauce - Best if it is all natural, no sugar added
- 3 tsp vanilla
- 3 tbs coconut oil, melted
- 1 tsp baking soda
- 1 tsp cinnamon
- ¾ cup of whole wheat four
- ¾ cup oat flour
- Mash Bananas in a medium sized bowl
- Add flours, baking soda, and cinnamon in a large bowl
- Add in mashed bananas, oil, applesauce and vanilla to the dry mixture bowl
- Coat pans with oil or use muffin papers
- place in pan
- Bake at 350 for 15-20 minutes
- Let cakes cool and use one of the frosting recipes below!
These will make about 12-18 cupcakes! This recipe doesn’t rise much so you may need to fill baking cups most of the way full. If they are too low in the cups they will be difficult to frost.
I love the way these cupcakes turn out! They are so delicious and it makes it a million times better when they are healthy too! I wanted to do a dairy free frosting to top my cupcakes and I found this AMAZING dairy free White Meringue Frosting! It goes great with the cupcakes!
However if you want a healthier PALEO frosting to top with, check out this recipe!
Depending on how much you mash the bananas – these cupcakes will be a little chunky. If you want it more smooth you may have to mash more or you a small blender. I was going to add BLUEBERRIES to this cupcake recipe and I KNOW Little Ox #1 would have loved it, but unfortunately we did not have any! (A rare occasion in our house!)
If you do want to make it Blueberry Banana Cupcakes, add 1/2 of fresh blue berries to the batter right before baking.
This could also be baked in a cake pan or two small ones for stacking for a PERFECT healthy First Birthday Smash Cake!
